O.K, look like David tennant is the one for you.
I recommend starting at
“Rose”: not David tennant, but it introduces you to the doctor.
Next watch the two parter that is “The empty child / The doctor dances”, just to get To know this character.
Next watch the Christmas special “The Christmas invasion”, which lets you see the transformation between doctors.
Now watch the two parter “The family of blood / Human nature”.
To finish off getting to know the show (Hey, that rhymed!) watch what is regarded as the best eppisode of all time, “Blink”.

First to Seventh Doctors are all grumpy, with little differences.

Second is all and only grumpy
Third is a fighter
Fourth is the type that will offer you a jelly baby at random moments
I don’t know anything about Fifth and Sixth
Seventh is a much darker person, somewhat like Fourteenth
Eight is romantic

Ninth is a bit dark, a fighter
Tenth is the all-knowing one
Eleventh is the mad man in a box that thinks of things as they’re “Cool”
Twelfth is a dark person, quite alike Seventh

Now, there is a bit of a mess with which Doctor is which number.

John Hurt is technically the Ninth Doctor, but in the story the Doctor doesn’t count him as if he was actually the Doctor, a self that betrayed him. So don’t be surprised if you hear that Eccleston is the Tenth, Tennant is Eleventh, Smith is Twelfth.

David Tennant played the Tenth Doctor – until Moffat, the producer (I think) decided to push in Hurt as the Ninth. Then it was revealed that in one of the episodes Tennant’s Doctor regenerated from his own hand, allowing him to keep the same body & personality.
So, by the script, Tennant is the Eleventh AND the Twelfth.

Matt Smith plays the Eleventh Doctor, until Hurt comes in. Then, because of the way the order changed because of the previous Doctors, he is actually the Thirteenth. You may hear him being called Eleventh, Twelfth or Thirteenth.

Now, regenerations. The Doctor’s species, Gallifreyans a.k.a. the Time Lords, are physically allowed on twelve regenerations, meaning thirteen bodies. In the script, their sciense has improved enough to allow them to add to this number.
The Thirteenth Doctor, Matt Smith, dies. However, before his death, the Time Lords grant him a second regeneration circle, and so, Fourteenth (Peter Capaldi) could be added in.

Before the surprising reveal of Tennant’s and Hurt’s regenerations, Capaldi was called by the Whovians the Twelfth Doctor.
